Colby and Megan Garrelts, owners of Bluestem and Rye in Kansas City, share their updated recipes for Midwestern classics. Recipes include biscuits and gravy, grilled steaks, and fried chicken with fresh ingredients and modern twists. The Garrelts believe that Midwestern food is the last unexplored American cuisine. This cookbook reflects the love they feel for the food they grew up with.
