Some of the recent America's Test Kitchen books have been duds for me (specifically the DIY cookbook), but this one made up for that. Great explanation of ingredients and where to find them along with so many recipes that are in my regular rotation. This is one of those cookbooks that you'll end up buying because there are too many good recipes.

Excellent recipes and great pictures. Helpful to have the "tried and tested" explanations as to why certain ingredients have been used or replaced. A must for any kitchen book shelf.
